Back by popular demand, my "not a Christmas pudding" is perfect for those who want a festive centrepiece to end the big meal, but hate traditional Christmas pud!
With a squidgy chocolate sponge centre, layered with spiced rum spiked salted caramel frosting, covered in rich chocolate ganache studded with rum-soaked raisins, and finished with white chocolate ganache and a hand-made sugar holly topper. Why not add your own sparklers for a final flourish!
